Executive Chef
Fabio Silva

Since March 1st 2011 Fabio Silva is the Executive Chef of the Hotel de la Ville in Monza and its renowned Derby Grill restaurant. Neapolitan and 33 years old, Fabio graduated at the Hotel Management School “Cavalcanti” in Naples and began his professional career covering, with commitment and merit in qualified Italian hotels and restaurants, all cuisine lines, from garde-manger to first and main courses and also pastry, still his passion. Today Fabio studies and realizes the menus with a great sensibility and a particular care for the evolution of cuisine trends that he perceives by attending assiduously fairs and professional training courses. Talented, enthusiastic, responsible and with a remarkable sense of organization, with a particular dedication for the culture of products, Fabio Silva has been awarded by the most prestigious Gourmet Guides for his cuisine with a strong character and respectful of the territory.

Stefano Ierardi

Stefano Ierardi, from Brianza, is born in 1976 in Mariano Comense, Como provenice. After the high school at IPSAR Institute “Carlo Porta” in Milan, he begins his career alternating experiences at Grand Hotel Miramonti Majestic in Cortina, Hotel du Lac in Bellagio and Hotel de la Ville in Monza. In 2006 he enters as chef de partie in the team of Claudio Sadler, famous 2 Michelin star restaurant in Milan. Then in 2008 he gains an important experience at the “Osteria del Pomiroeu” restaurant in Seregno (1 star Michelin), then comes back to Sadler, as Executive Chef responsible of the new restaurant along the Naviglio canal, “Chic’n Quick – Trattoria Moderna”. During the three working years with Sadler great chef , Stefano assimilates the precise and rigorous style of the master, extraordinary interpreter of the Italian cuisine. Motivated by his great passion, Stefano Ierardi accepts in March 2011 a new opportunity: to come back to Hotel de la Ville as Executive Sous Chef with Fabio Silva, with the objective to reach new important goals in the best restaurant of the city.
